Meet the Brewer: Mills Brewing

We've got Jonny Mills in the house for a proper Meet the Brewer night — three Mills Brewing beers pouring on tap, plus a run of their big bottles opened up specially for the evening.
Turn up for the tap pours — no ticket needed, just come and drink. For the bottles, though, you'll want a ticket: £20 gets you three bottle pours and a cheese plate to enjoy alongside. Spaces for the tasting are limited, so don't leave it too late.
A bit about the brewery
Mills Brewing was started by husband-and-wife team Genevieve and Jonny Mills, brewing out of Berkeley before settling into their current home — a converted barrel store at Griffin Mill in Stroud. What sets them apart is how they ferment: no commercial yeast anywhere near the place. Everything ferments wild, using the local yeast and bacteria that's naturally in the air around the barrel store, the same principle Belgian lambic brewers have worked with for generations.
The beers sit in wooden barrels for anywhere between two and four years before Jonny and Genevieve even start thinking about which ones are ready to blend. Once they've found a blend they're happy with, it goes back into bottle to condition for months more with that same wild yeast. It's slow, unpredictable, and every batch comes out slightly different — which is exactly the point. They're not chasing consistency, they're chasing whatever flavour the barrels and the wild yeast decide to give them that time round.
It makes for some genuinely one-off beers, and it's a rare enough process that this is a proper chance to taste it and hear it explained by the person actually doing it.
